Sous vide mustard thyme pork chops with roasted sesame purple asparagus and mashed potatoes

I desperately wish my food photography skills were up to the task of capturing how delicious this was.

I will come back to the pork chops another time, but the asparagus was so simple and easy I have to tell you about it right now.

This is nothing more than asparagus tossed with kosher salt, freshly ground black pepper, white sesame seeds, and garlic powder (yes, the stuff in the can!), then roasted.

I like to roast my asparagus (and most of my veggies) hot and and until crispy. This was nearly 30 minutes in a 400 degree oven. I'd start checking it at 15-20 minutes if you like it a little less roasty than I do. Definitely plan to give the pan a toss during cooking, around the 10-15 minute mark will probably do.

I really had no plan with the sesame seeds. I just shrugged my shoulders and tossed them in and I'm so glad I did!

Note that of course you do not need purple asparagus for this... I just thought it looked neat. Use what you've got. This could work just as well with broccoli... maybe even carrots or parsnips. Always worth a try. What's the worst that could happen?
